cabbage roll

So I went with the Moosewood Restaurant recipe for cabbage rolls containing tofu and mushroom stuffing.  Also some Baked beets and shallots and brown basmati rice. I think I used just about every pot, bowl, pan, and utensil in my kitchen though!

Bought the tofu from Broadway Supermarket in Uptown, made by a local company.  I have to say that I really do think it was better than the stuff you can buy at Jewel.  Also I put miso in with my beet greens… I don’t suggest it, edible but not really good.

But…the baked beets and shallots were heavenly and my cuticles were only fuchsia for an hour or two!
