I found it daunting. I threw away quite a few rice paper wrappers, until I worked out a process with a spatula. Luckily you get can get a very large package of wrappers for relatively little cash. In the end, I kind of pulled it off.
I forgot the lettuce for a bunch of them and I ran out of shrimp, but they all taste delicious. They may not be as pretty as the ones you get at a restaurant, but I still think they are pretty in a messy way. The cookbook suggested hoisin dipping sauce but I liked both plum and sweet chili better. Hopefully the leftovers will taste good for lunch tomorrow because right now I’m stuffed.
