Yes! I made spring rolls

spring rollsI found it daunting. I threw away quite a few rice paper wrappers, until I worked out a process with a spatula. Luckily you get can get a very large package of wrappers for relatively little cash.  In the end, I kind of pulled it off.

I forgot the lettuce for a bunch of them and I ran out of shrimp, but they all taste delicious.  They may not be as pretty as the ones you get at a restaurant, but I still think they are pretty in a messy way. The cookbook suggested hoisin dipping sauce but I liked both plum and sweet chili better. Hopefully the leftovers will taste good for lunch tomorrow because right now I’m stuffed. FYI…the reason there are so many posts today is because my internet has been out for like a week. I was catching up.
