roasted vegetable pate and pita chipsAfter the bacon last week, vegetarianism sounded like a good idea. Especially after eating a little of the Roasted Vegetable Pate I made.

Simple, completely bacon-less and so delicious! Sweet potatoes, onions, red peppers, zucchini, tomatoes, eggplant just drizzled with fruity Spanish olive oil and sprinkled with salt then roasted and run through the food processor. Sweet, simple, salty goodness… on pita chips.

I’m feeling a trend coming on so stay tuned for homemade veggie burgers.
