They are ‘lighter’ because they are on a cornmeal cookie instead of butter soaked shortbread. They are delicious, tangy yet creamy and rich. My only mishap was that I only had medium-grind cornmeal so that is what I used, not my best substitution ever. Sometime I think it is a nice texture difference with the lemon but then I occasionally bite into a pretty large and crunchy piece of corn. I promise all my teeth are still intact though.
